Family Veg Night

January 11th, 2007

Last night Richard and I ventured over to my parents house for our weekly Family Veg Night. On the menu tonight was:

Fried Plantains

Spinach and olive lasagna.

Honestly, I’ve never been a big fan of lasagna but I really like John’s. It’s odd but I’m going to say I like his because he doesn’t use any Ricotta cheese (:P). Thanks for making it the way I like it John!

Happy New Year Teddy!! Sounds like you had a nice holiday.
Family food nights – what a great idea. I love lasagna! My mother-in-law makes a fantastic veggie version. I make one that is a bit of a spin-off from a Peta recipe. I don’t use ricotta cheese, I use Italian herb tofu. Give it a great flavour.

I’ve never been a big fan of lasagna either. Then again I don’t like pasta. I have used sheets of eggplant and squash in place of the pasta. I liked that version. :-)

I’ve always loved your family nights. Yeah lasagna. I have never enjoyed this dish much either when I was growing up, I think due to the cheeses (often cottage).
