I’ve been keeping busy and I’m excited to say that I’ve joined up with Melody’s recipe testing group. I’m hoping this will give me new motivation to prepare homemade meals. I’ll have to admit that now that it’s just me, my desire and drive to prepare an actual meal has lessened.
But I’d like to encourage everyone to help Melody out

This pesto filled tortellini has been begging to be made for quite sometime now. After a quick trip to the produce store I was ready to make this tortellini’s dreams come true
I created a sauce of cherry tomatoes, a bunch of fresh basil, sweet red onion, garlic and a splash of white wine. You simply sautée the onions and deglaze the pan with the wine. At the last minute I added the tomato basil and garlic.
Turned out quite well if I do say so myself!
I LOVE to snack. It’s probably my biggest culinary downfall. I decided that I really need to at least attempt to snack in a healthy manner.

Last night was feeling sick and I was in dire need of a homemade meal.
I threw some dried black beans into a pot and just let them boil away for a couple of hours before cooking up some rice and throwing raw ingredients on top.
I’m not sure why, but I was craving raw red onion. It topped the dish off well.
Today I feel much better and am convinced the homemade meal did it’s job
This is my second go with the quorn and i decided to try a completely different style. Chick’n noodle soup was much better than the chick’n topped potato. The vegetable broth took away from the intense quorn flavor that was too much for me last time.
It’s cooled down drastically in the last week here. The temperature has changed from the low 100’s to the low 60’s in the mornings. To me, that makes for some good soup weather
I’m having the leftovers today for lunch.
If you were to sit and have lunch with me, you’d see that I LOVE pre-packaged salads. I munched on this one yesterday. It’s fresh greens with toasted almond slivers, artichoke hearts, hearts of palm, and cherry tomatoes with a raspberry vinaigrette.
I think it’s a refreshing summer salad and I enjoy devouring it outside at a picnic table.

It’s been too hot here to move. Right now my thermometer says it’s 101 degrees and I live 5 miles from the beach so that’s the coolest around.
I’ll be heading to the beach and the only thing I’ve been munching on is fresh fruit and tons of water.
I’ll be making a food post tomorrow until then, stay cool
