Golden Beets Saturday, March 15th, 2008

I like beets.
Roasted, pickled, any way I can get them.
When I spotted these golden beets at my local farmers market I was eager to give them a try.

You would think that golden beets would be a new favorite veggie. Unfortunately, these golden beauties do not hold a candle to their ruby cousins. They lacked the sweetness of red beets and this girl was a little disappointed.

From now on, I’m sticking to red beets!

However, if you think you don’t like beets, give golden beets a try. Their flavor is less intense and your body will thank you for the nutrients.

A couple of days ago I had a very odd craving- BEETS. This is odd for me because I don’t recall ever eating beets as a kid, I think I’ve had them less than 5 times in my entire life actually.

Needless to say, I went to the market and got beets with their greens still attached.

My creation

I ended up making garlicy beet greens over organic polenta with roasted beets on the side. It satisfied my craving and gave me a pink mouth at the same time!

How do you prepare beets?
