Tempeh Filled Soup Thursday, January 15th, 2009


If you ask me, fried tempeh is just about the best thing ever. I can’t think of an easier or better way to use tempeh so I usually end up frying it just because it sounds so darn good to me. Since you can’t eat fried tempeh by the bowl alone (well you can but you really shouldn’t), I usually end up placing it on top of a soup or salad. Looks like today was a soup day eh?

This soup wasn’t anything special really. A mirepoix (carrots, celery, onion) shitake mushrooms, miso, finally I added some parsley and the celery tops at the end. The highlight of the meal was definitely my beloved tempeh.

On Saturday I’ll be assisting in my first class at school. I’m a little nervous but I’m sure I will survive. I may be exhausted because it’s 4-5 hours long but I need to earn at least 160 assisting hours before I can graduate so I need to get started already.

Anyone have any fun weekend plans?

Fried Tempeh and Greens Friday, December 5th, 2008

It’s an epic battle: Tempeh vs Setien. Each have their own uses, their own pluses and minuses but everyone must have a favorite. Can you guess mine?
Yep. I prefer tempeh most of time. It’s just SO good!
Today’s lunch is fried tempeh drizzled with shoyu on top of sautéed mustard greens and sweet red onions on a bed of brown rice/barley. It’s not lunch time for me yet but I love it when I have a good lunch to look forward to. What a nice way to start my busy weekend.

Tonight Will Tuttle (the author of The World Peace Diet) is speaking at my school
Tomorrow is my holiday party for work and school AND a band I like is playing
Sunday there is a vegan potluck that I may be attending.

And I was all excited for my relaxing weekend. I’m too much of a “yes” person. Anyone asks to hang out and I automatically say yes and before I know it I’ve got about 390584908 things to do. This is both a blessing and a curse…
I should mention, if I end up going to that potluck I will be posting step by step instructions for making those dumplings from a few weeks back.

Udon Noodle Bowl + Fried Tempeh Thursday, November 6th, 2008


I have a new favorite way to eat tempeh- fried in sesame oil then dribbled with a little shoyu.

It was necesarry to add that picture and comment about the tempeh because you simply cannot see it in the completed udon bowl. This is another class picture again (you thought ALL that tempeh was just for lil ole me?? oink oink). Items included in our udon bowl are- tempeh, dashi broth, shitake mushrooms, carrots, diakon radish, diakon radish greens, wakame and udon noodles.

I think I’ll make some dashi broth at home in the next few days. I love shitake mushrooms and this broth is full of shitake goodness. Off to work now!
